Quarantine Snacks we are loving
Let’s face it, we all love snacking at the moment, whether it’s popcorn, cookies, home baked cupcakes, crudities or protein shakes. Don’t feel guilty for eating a little more at the moment, it’s totally normal, totally fine and if it makes you feel good do it. Anything that makes you feel better during these weird times is so needed in our lives.
Some of us prefer home baked snacks, some prefer the shop bought snack like the perfect flavoured crisps dipped in lashings of hummus. Whatever type of gal you are we’re written down our favourite snacks that are getting us through this very very strange period.
*Note* we’ve kept the recipes healthy to ensure your gut and your digestion doesn’t go AWOL on you!

Chocolate And Sea Salt Brownies
Method
Preheat your oven at 175C. Beat the eggs and add the coconut sugar, followed by the ground almonds and a pinch of salt. Mix well.
Add the melted (but cooled down) coconut oil and the cocoa powder, mix gently as the cocoa powder is fine.
Pour in a greased muffin tray (I use coconut oil) lined with baking paper. Bake at 175C for 18 minutes.
Let it cool down and decorate with sea salt flakes.
Enjoy!! I love having these with a cup of coffee. Total treat but not too naughty.
Ingredients
80g of ground almonds
80g of cocoa powder
2 eggs
130g of coconut oil
200g of coconut sugar
sea salt to decorate
Cookie Dough Balls
Method
Mix together all ingredients in a bowl until well combined.
If too wet to roll into balls, chill in fridge for 30 minutes.
Roll into balls and store in fridge or freezer. If freezer, defrost for a few minutes before eating.
Ingredients
1 cup + 2 tbsp oat flour
1/2 cup nut butter, I prefer salted peanut butter or cashew butter.
3 Tbsp honey
1 Tbsp coconut oil melted
1 tsp vanilla
Pinch of salt if none in nut butter
1/2 cup chocolate chips
Chocolate Covered Bananas
Method
Peel the bananas, then slice in half and insert a popsicle stick into the cut end.
Lay the bananas on a piece of parchment paper or wax paper and freeze for at least 2 hours.
Melt the chocolate in a double boiler or in 20 second increments in the microwave.
Dip the frozen banana into the melted chocolate and twirl to remove any excess. Sprinkle on any toppings while the chocolate is still wet, then place on a piece of parchment paper or wax paper and allow the chocolate to fully harden. Enjoy immediately.

Frozen Grape & Granola Yogurt Bark

Ingredients
2 cups plain Greek yogurt, preferably whole-milk
1/4 cup brown sugar/ honey/ maple syrup
2 teaspoons vanilla extract
1/8 teaspoon salt
3/4 cup quartered seedless grapes
3/4 cup granola
Method
Line a rimmed baking sheet with parchment paper; set aside. (Make sure it fits in your freezer, otherwise line 2 large plates instead.)
Place the yogurt, sweetener, vanilla, and salt in a medium bowl and whisk to combine. Pour onto the baking sheet and use a rubber spatula to spread into an even layer about 1/2-inch thick (it will not reach to the edges of the baking sheet). Scatter the grapes and granola evenly over the yogurt.
Freeze uncovered until solid, about 4 hours. Pick up the bark by grasping the parchment and lifting it up and onto a cutting board. Cut or break into irregular pieces and serve immediately, or keep frozen in an airtight container or freezer zip-top bag.
